I don't use my slow cooker hardly enough. When I do, I am reminded that it is a time saver. More importantly, my slow cooker can produce healthy and flavorful meals that offer me a hassle-free dinner.
French Lentil Rice Soup
Serves 4
Ingredients:
6 cups chicken broth or vegetable broth
1 cup lentils, picked over and rinsed
2 medium carrots, peeled and finely diced
1 small onion, finely chopped
2 celery stalks, finely diced
3 tablespoons uncooked white rice
2 tablespoons minced garlic
1 teaspoon herbs de Provence or dried thyme
1/2 teaspoon salt
1/8 teaspoon ground white or black pepper
1/4 cup heavy cream or sour cream, divided (optional)
1/4 cup chopped parsley, divided (optional)
Directions:
Stir together broth, lentils, carrots, onion, celery, rice, garlic, herbs de provence, salt and pepper in a slow cooker. Cover and cook on low for 8 hours or on high for 4 to 5 hours.
Remove 1-1/2 cups soup and puree in a food processor or blender until almost smooth. Stir pureed soup back into the slow cooker.
Divide soup evenly among 4 serving bowls, garnishing each with 1 tablespoon cream and 1 tablespoon chopped parsley, if desired.
Enjoy!

I don't use my slow cooker much either. When I do, it is such a comfort to know that dinner is cooking away without needing my attention. I have all the components to make this soup. I think tomorrow would be perfect!

This is absolutely perfect timing. I bought lentils, split peas, black beans and more a few days ago, to make a great bean soup for the weekend. But I just may follow this recipe instead. (I don't have cream. How terrible is that?)
I love Lentil Soup, it's one of my favorites! This is a great slow cooker recipe, I just dusted mine off too a few weeks ago and my first meal was not that successful, maybe I'll try this to redeem myself!
This is probably the only recipe I have seen from you that I know I will not be making. I would love to eat it at your house, though. It looks delicious, but Vanja won't "do" lentils, and I have found when I make my own soups, I can never finish them all, even when freezing. It is the best lentil soup I have ever seen anywhere, that is for sure (most ingredients, most complex group of flavours)

Velva, I just love all things lentil, the red ones and the little tiny brown ones too! They cook so quickly and don't need soaking so great for a quick meal! I guess "fall" is here, oh yeah, that mean's 80's instead of 90's! haha! Enjoy darling!

It is slow cooker season again! I don't have a slow cooker because I live in a tiny urban apartment, but I totally agree with the convenience, and fab results, especially with meats. This looks like a terrific healthy dinner.
I love slow cooker season. I'll often put something on at night when I know I'll be gone too long the next day for a slow cooker. Then I put it in the frig in the morning for dinner that night. The aroma of savory soups and stews in the morning gives me something to look forward to when I get home.
I love lentil soup, but this one looks even more amazing than any I've ever made... Could it be the sour cream? Or the slow cooker? In any case, it looks delicious!!
