French Lentil Rice Soup

Just as soon as I throw the windows open and get prepared to put on warmer clothes, the warm air comes rushing back. No matter, the cool air will return, and this is what we will be eating.

I don't use my slow cooker hardly enough.  When I do, I am reminded that it is a time saver.  More importantly, my slow cooker can produce healthy and flavorful meals that offer me a hassle-free dinner.

French Lentil Rice Soup
Serves 4

Ingredients:
6 cups chicken broth or vegetable broth
1 cup lentils, picked over and rinsed
2 medium carrots, peeled and finely diced
1 small onion, finely chopped
2 celery stalks, finely diced
3 tablespoons uncooked white rice
2 tablespoons minced garlic
1 teaspoon herbs de Provence or dried thyme
1/2 teaspoon salt
1/8 teaspoon ground white or black pepper
1/4 cup heavy cream or sour cream, divided (optional)
1/4 cup chopped parsley, divided (optional)

Directions:
Stir together broth, lentils, carrots, onion, celery, rice, garlic, herbs de provence, salt and pepper in a slow cooker.  Cover and cook on low for 8 hours or on high for 4 to 5 hours.

Remove 1-1/2 cups soup and puree in a food processor or blender until almost smooth.  Stir pureed soup back into the slow cooker.

Divide soup evenly among 4 serving bowls, garnishing each with 1 tablespoon cream and 1 tablespoon chopped parsley, if desired.

Enjoy!

I don't use my slow cooker much either. When I do, it is such a comfort to know that dinner is cooking away without needing my attention. I have all the components to make this soup. I think tomorrow would be perfect!

Best,
Bonnie

What a lovely hearty soup. I really like lentils a lot. Even though they are just beans, there is something about them that is very rich and satisfying.
Hope you are having a great weekend.

I love all the flavors you've got going on in there. Makes me happy it's getting to be soup weather!

Delicious looking soup! I'm with you, whenever I pull out that crock pot I always wonder why I don't use it more often. Thanks for this recipe Velva.

I love you! I belong to a book club where we have several vegetarians and a gluten-free girl...I know what I'm making this Thursday when they arrive!

This is absolutely perfect timing. I bought lentils, split peas, black beans and more a few days ago, to make a great bean soup for the weekend. But I just may follow this recipe instead. (I don't have cream. How terrible is that?)

I love Lentil Soup, it's one of my favorites! This is a great slow cooker recipe, I just dusted mine off too a few weeks ago and my first meal was not that successful, maybe I'll try this to redeem myself!

This is probably the only recipe I have seen from you that I know I will not be making. I would love to eat it at your house, though. It looks delicious, but Vanja won't "do" lentils, and I have found when I make my own soups, I can never finish them all, even when freezing. It is the best lentil soup I have ever seen anywhere, that is for sure (most ingredients, most complex group of flavours)
:)

Mmmm, delicious! It's definitely fall - this is the 3rd lentil recipe I've happened upon today! Bring it over to link up on Tailgating Time today at Seaside Simplicity :-)
Thanks for stopping by. Enjoy what's left of the weekend!

Know what you mean about indecisive weather. It snowed at Mt LeConte earlier this week and I got sunburned yesterday at my boy's football game.

This lentil soup looks perfect for the coming gloomy days of late fall.

I LOVE slow cooker recipes, and I love lentils - this is a fantastic combo in my book! :-) Thank you!

Loving this - adore lentil soup. I no sooner made lentils and pasta and the temps soared in to the upper 80's. Go figure. Ready to return to this delicious soup when the temps go (down) to normal.

What a great and comforting soup. Delicious on a cool night. I only use my slow cooker for Chinese herbal drinks, should really give this a try! Thanks for sharing!

That's a healthy and delicious soup. I need more of this in this cold weather. I have to dig out my slow to use...still brand new and in the box!

Velva, lentil soup is a family favorite in our house and I usually make a German version with little flour dumplings, this looks just as delicious and I will have to bookmark to try it out :o) Thanks for sharing!

Our weather has been very similar, 90 degrees one day and cold thunder storms the next. Looks like a very hearty soup.
Whats up with those gators?

I definitely don't use my slow cooker enough either! I am bookmarking this though...it looks so tasty and I've had an undeniable craving for lentils lately.

Velva, I just love all things lentil, the red ones and the little tiny brown ones too! They cook so quickly and don't need soaking so great for a quick meal! I guess "fall" is here, oh yeah, that mean's 80's instead of 90's! haha! Enjoy darling!

I'm not a rice fan, so I may just replace it with all lentils--can't wait to try this!

Hi Velva, I love lentils but haven't had any in years and years... Your soup looks wonderful... I got so excited a couple of weeks ago when it got cooler. We bought ingredients for some homemade chili ---but now that it is warmer here too, we haven't made it yet.....

Have a great day.
Hugs,
Betsy

This would be lovely meal to come home to. I know that I certainly love the ease of slow cooking. And I'm always a big fan of lentils...so much nutrition backed into those little guys. Thank you for sharing this with me!

It is slow cooker season again! I don't have a slow cooker because I live in a tiny urban apartment, but I totally agree with the convenience, and fab results, especially with meats. This looks like a terrific healthy dinner.

Mother Rimmy said...

I love slow cooker season. I'll often put something on at night when I know I'll be gone too long the next day for a slow cooker. Then I put it in the frig in the morning for dinner that night. The aroma of savory soups and stews in the morning gives me something to look forward to when I get home.

I love lentil soup, but this one looks even more amazing than any I've ever made... Could it be the sour cream? Or the slow cooker? In any case, it looks delicious!!

I'm not a huge fan of lentils but I'm not sure I would be able to turn down a bowl of this if it was put in front of me. It has comfort written all over it.

These are definitely soups that add comfort to an otherwise less comforting day ;o)

Great healthy ingredients...what more can we ask for?

Flavourful wishes,
Claudia

I could have sworn I commented on this post! This is the best-looking bowl of lentil soup I've ever seen. It is not easy to photograph, as I know. I love lentils.
