A Southern Black Eyed Pea Salad

In the South folks feel pretty strongly about their black-eyed peas! They even love their black-eyed peas in salad.  Here is a twist on a contemporary Southern dish.

Makes for a perfect side dish for a cookout or a picnic, served up with grilled meats, delicious!

Black-Eyed Pea Salad
Serves 6
Recipe adapted from Emeril

Ingredients:
5 cups cooked and drained dried black-eyed peas
4 slices crisp cooked bacon, crumbled, fat reserved separately
1/2 cup plus 2 tablespoons red wine vinegar
1/2 cup olive oil
1/2 cup finely chopped red onions (1/2 medium onion)
1/2 cup finely chopped red bell peppers
3 tablespoons finely chopped green onions
2 tablespoons finely chopped jalapenos
2 tablespoons finely chopped fresh parsley
1-1/2 teaspoons minced garlic
1-1/12 teaspoons Emeril's Original Essence
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions:
1.  Combine the black eyed-peas, bacon, 3 tablespoons reserved bacon fat, and all the remaining ingredients in a large bowl; toss well to combine.  Cover and refrigerate for at least 4 hours or preferably overnight, stirring occasionally.

2.  Allow the salad to sit at room temperature for 30 minutes before serving.  Toss well just before serving.

Enjoy!

I make something similar called Texas Caviar. I love it. We serve it at cookouts in the summer!

Velva, I love any kind of bean salad, they are so versatile, inexpensive and filling. And if you omit the bacon, good for vegetarians. Have a great holiday, friend.

Like some of the others, I make something similar except I add pieces of chopped browned ham. It's one of our favorite lunches.

I'm a southern girl, so I adore black-eyed peas.

What does Emeril's essense taste like? I know about it and there's probably a recipe for it someplace, but I've never used it.

It's funny, because I just pulled out a container of black eyed peas that I'd made earlier this year in the pressure cooker and frozen. Just defrosted them tonight and used them to top a huge salad.

It's funny, I've never had black eyed peas and I lived in the south for a few years! Maybe they don't serve them to Yankees.

This looks delicious! I always think as the weather warms that I won't want hearty dishes like this, but they still have their place. I could go for a bowl right now!
