Dirt to Table Experience: Fresh Beet Salad

Okay, don't say "Ewww beets!" I know that beets are a love them or hate them vegetable.  I have a strong opinion about those who dislike beets, but have only experienced beets from a can or a jar.  You cannot officially say you don't like beets until you have done two things:
You have eaten them prepared fresh 

or 

You have taken fresh beets and have roasted them in the oven

If after both these attempts have been made, and you still don't like beets, then you can say "Ewww beets!"  I doubt you will.



Fresh Beet Salad
Serves 4


Ingredients:
5-6 fresh medium beets
Small onion thinly sliced
6 tablespoons olive oil
3 tablespoons balsamic vinegar ( red or white)
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1 clove garlic, minced
2-3 tablespoons fresh parsley, chopped
Fresh mix of salad greens
Salt and freshly ground pepper to taste

Directions:
Place beets in a saucepan and cover with water. Bring beets to a boil and simmer until tender about 25-30 minutes.

Remove beets from the heat. Drain.  Cool.  Peel the beets and slice or cut into wedges.

Whisk together the olive oil, balsamic vinegar, Dijon mustard, sugar, garlic and salt and pepper to taste.

Arrange greens on a platter.  Place beets on top of greens, followed by thinly sliced onion and chopped parsley.

Pour vinaigrette over salad.  Serve.

Enjoy!

I love fresh beet & I think your salad looks amazing. We just cleaned out our garden boxes today. I've never thought of growing beets, but I think it's a great idea!

It is so true with beets you either love them or hate them. I like beets, but I don't eat them to often. This recipe sounds delicious.

I don't understand how you can not love a beet! Your salad looks lovely; very similar to the one I served with my "Grown Up" Spaghetti Pie!

The salad looks delicious. We love beets, roasted or raw. I use a julienne slicer on raw beets and add it to salads.

Beets from my garden are still not ready but I love beets in many ways. This salad looks great. I like cooked beets with vinaigrette dressing..

Baked beets? Oh Yes, I bake it in batches, that's how good it is... And if it comes from the garden, it's even testier... Love beets!

I think your theory is dead on. I didn't like beets until I had the non-canned variety.

Beets are just so beautiful. And I will save this because I make them for my husband. As for me - I've tried them every which way and have surrendered to the fact that I merely like to look at them!

Far from it! Red, gold, or striped - I'm in love with beets! I don't even need an excuse to roast beets for a lovely salad like this one!

I have to say I agree with you, Velva. Hailing from Michigan, land of the sugarbeet and from Polish/German roots, I should like beets by default. But I hated them, thought they tasted like mud. Until...I got my first Florida CSA a few years ago and they included baby, farm fresh beets. I roasted them, they caramelized, served them up with artisanal goat cheese and tossed them in a salad....now I LOVE BEETS! Even though your salad looks divine, I still think I have to cook them to like them!

I adore beets!! With my Danish background, I grew up eating them pickled. Yummers! :-) This salad is lovely and so fresh.

You are totally right, I was a hater until I had a fresh baby beet. I'm learning to revisit other foods I didn't like before. Lot's of great food out there!

Well, I won't say eww. But I WILL say that I'm very iffy about beets and have liked them in certain dishes but hated them in others. THis salad is certainly worth a try!

Is it weird that the only way I like beets is cold in a salad? Even if I roast them, I have to eat them cold.
