Baked Sweet Potato "Fries"

Got sweet potatoes? Did you know that orange fleshed sweet potatoes have a significant amount of beta carotene (Vitamin A)?  Did you know that just the addition of 1 tablespoon of olive oil can ensure that our body increases the uptake of beta carotene to about 35% of our daily requirement? There are a lot of good reasons to toss a bag sweet potatoes in your grocery cart.

I enjoy roasting potatoes to serve as a side dish but have discovered that roasting sweet potatoes with a hint of olive oil, brown sugar, salt and pepper can bring it up a notch both in flavor and nutrition.



Baked Sweet Potato "Fries"
Serves 4
Recipe from Ina Garten


Ingredients:
2 medium sweet potatoes, peeled
2 tablespoons olive oil
1 tablespoon light brown sugar
1/2 teaspoon kosher salt, plus extra for sprinkling
1/2 teaspoon freshly ground black pepper

Directions:
Preheat the oven to 450 degrees.

Halve the sweet potatoes lengthwise and cut each half into three long spears.  Place them on a sheet pan and toss with olive oil.  Spread the potatoes in one layer.  Combine the brown sugar, salt, and pepper and sprinkle on the potatoes.  Bake for 15 minutes and then turn with a spatula.  Bake for another 5 to 10 minutes, until lightly browned.  Sprinkle lightly with salt and serve hot.

Who can pass up such a healthy dish? I've used Ina's recipe for awhile now. One evening we had some leftover (imagine) and I reheated them the next day. I think they might have been even better since they reheated even crisper. Worth a try.

This is actually on my Superbowl meal list, along with my slow cooker teriyaki chicken wings and strawberry moose, but I'm actually planning to simply place them on the george foreman as I need the over to crisp up my wings.

Perfect timing for a great recipe!
We just got back from a weekend in the mountains and the place where we had lunch served sweet potato fries just like these. Danny really liked them and commented that we needed to fix some at home!! Thank you!!

I've been roasting a lot of vegetables lately - I think it's the best way to prepare veggies, and I'll have to add roasted sweet potatoes to my repertoire.

That's so funny, Velva, I made Sweet Potato Fries for dinner last night! I got a bit "creative" and gave them a dash of balsamic vinegar. Oh my, Marion didn't like that at all, lol...I had to try to rinse them off, Marion didn't like that any better, lol..Personally, next time I'll forget the vinegar, lol...

I can never get my sweet potato fries crispy. After looking at your recipe, I think my oven temp may be set too low. I will have to try your version - looks yummy!

I always make & bake my own sweet potato fries but never added brown sugar to them! Does that not make them too sweet? I alway like to spice them up!
